Andalusia is known as the home of the chilled summer soup gazpacho, although it is unknown if it arrived in Southern Spain via the Moors or the Romans. In the old days, the ingredients would be pounded with a pestle or meticulously chopped by hand.... our version is served smooth with all the right garnishes (avocado, croutons, cucumber, and peppers). All locally sourced, organic ingredients. Add a baguette and a log of Noble Springs chèvre to make it the perfect summer dinner. (2 servings - for more than 2 servings, simply adjust the quantity in increments of 2)
